INGREDIENTS

FOR MACHURIAN BALLS
  1. 1 cup cabbage (shredded)
  2. 1 carrot, grated
  3. 4-5 tbsp spring onion, chopped
  4. ½ onion, finely chopped
  5. ½ tbsp ginger garlic paste
  6. 2 tbsp maida (plain flour)
  7. 1 tbsp chili powder/ chili flakes/ fine chopped chili
  8. 3-4 tbsp cornflour
  9. Oil, for frying
FOR GRAVY
  1. 2 tbsp oil
  2. ½ tbsp ginger, garlic, finely chopped
  3. 4 tbsp spring onion, chopped
  4. ½ onion, finely chopped
  5. ½ capsicum, sliced
  6. ½ tbsp black pepper powder
  7. ¼ tbsp salt
  8. 2 tbsp cornflour
  9. 3-4 tbsp water
  10. 1 tbsp vinegar
SAUCES
  1. 2 tbsp soya sauce
  2. 1 tbsp chili sauce
  3. 2 tbsp tomato sauce
  4. 1 tbsp schezwan sauce (optional)

INSTRUCTIONS

  1. In a big bowl take cabbage, carrot, capsicum, ginger garlic paste, onion, spring onion, salt, chili powder (as per your taste) and mix everything well together.
  2. Add maida, cornflour and mix well.
  3. Do not use water. Go on mixing and moisture released from veggies will be absorbed.
  4. Form a soft dough add maida or cornflour if required.
  5. Mix well and make a soft dough of it.
  6. After making dough take a small portion of dough and make a small ball.
  7. Heat up oil in a pan and add Manchurian balls to it.
  8. Fry the Manchurian balls until these turn nice golden brown.
  9. Drain off the Manchurian ball and take these out into a dish.
  10. Manchurian balls are ready.
  11. Take cornflour into a bowl and add water.
  12. Mix well to make cornflour slurry and keep aside.
  13. Heat up oil in a pan.
  14. Add garlic and ginger saute for 30 seconds.
  15. Add sliced onion and fry it a little.
  16. Add sliced capsicum, carrot, spring onion fry a little.
  17. Add black paper powder, vinegar and mix well.
  18. Add soya sauces, tomato sauce, chili sauce, schezwan sauce (optional) mix well.
  19. Add salt be careful while adding salt as all these sauces contain salt.
  20. Mix well and add cornflour slurry.
  21. If you want more gravy then add more cornflour slurry and water.
  22. If you want thick gravy then don’t add water only add cornflour slurry.
  23. Mix well and cook for about 2 minutes until the rawness of cornflour.
  24. Add a prepared veg Manchurian balls and stir well add spring onion and mix well.
  25. Turn of the gas. veg Manchurian is ready for serving.

TIPS

  1. You can use veggies of your choice.
  2. You can add finely chopped chilies or chili flakes instead of chili powder.
  3. You can use cooked rice for making Manchurian balls crispy.
  4. You can serve veg Manchurian gravy with fried rice or veg Hakka noodles.
  5. When the use of grated cabbage, it releases more moisture so you can use finely chopped Cabbage.
