VEG HAKKA NOODLES

INGREDIENTS

FOR BOILING NOODLES
  1. 1 packet noodles
  2. 1 tbsp oil
  3. 1 tbsp salt
  4. 5-6 cup water
FOR SCHEZWAN NOODLES
  1. 1 tbsp ginger ( chopped in small pieces)
  2. ½ tbsp. garlic ( chopped in small pieces)
  3. 2 tbsp olive/ sesame oil
  4. sliced carrot (small)
  5. sliced cabbage (4 tbsp )
  6. ½ sliced capsicum
  7. onion chopped (medium size)
  8. ½ tbsp. vinegar
  9. ½ tbsp. black pepper powder
  10. spring onion for garnishing
  11. ½ tbsp. salt
SAUCES
  1. 1 ½ tbsp. tomato sauce
  2. ½ tbsp. soya sauce
  3. 1 tbsp chili sauce
  4. 1 tbsp schezwan sauce

INSTRUCTIONS

HOW TO BOIL NOODLES ?

  1. In a large pan or Kadai take water, add 1 tbsp salt
  2. Add 1 tbsp oil and boil the water
  3. After boiling the water add noodles you can use any noodle of your choice
  4. Boil until noodles are soft.
  5. Stir occasionally in between turn of the flame and transfer it to strainer/ Chalan to drain excess water
  6. Pour 1-2 cups of cold water over boiled noodles and drain again to remove excess stickiness.

HOW TO MAKE VEG HAKKA NOODLES?

  1. heat up a large pan or Kadai add oil. you can use any regular oil.
  2. When the oil is hot add garlic and ginger. Fry for just about 20 seconds.
  3. Add onion also and saute for the high flame.
  4. Add sliced carrot, sliced capsicum. Mix well.
  5. Fry carrot and capsicum for just about a minute.
  6. Add sliced cabbage mix well stir fry on high flame without overcooking vegetable veggies should retain its crunch
  7. Add salt and mix well
  8. Add soya sauce, tomato sauce, schezwan sauce, chili sauce.
  9. Add vinegar, black pepper powder mix everything well together.
  10. Stir fry for a minute making sure sauces is well combined.
  11. Add boiled noodles and stir fry on high flame
  12. Mix until the sauces are well combined
  13. Noodles Mix well with the help of pair of tongs.
  14. Add spring onions for garnishing.
  15. Veg Hakka noodles are ready for serving

NOTES

  1. Do not overcook the noodles if you overcook the noodles it gets sticky.
  2. If your noodles get sticky you can Pour 1-2 cups of cold water over boiled noodles and drain again to remove excess stickiness.
  3. You can use any vegetables of your choice
