SHEVAI KHEER

Shevai kheer is a traditional sweet and delicious Indian dessert made using vermicelli, milk and some nuts added gives crunch to every bite of kheer.

Shevai kheer is also known as sevai kheer or semiya kheer prepared for special occasions, celebrating happy moments and festivals. sevai kheer is mostly prepared on a Maharashtrian festival like Gudi padwa.

INGREDIENTS
  1. 1 tbsp ghee
  2. 1 cup fine shevai
  3. 750 ml milk (Full cream or full fat)
  4. 6-7 Cashew (chopped)
  5. 6-7 almonds (chopped)
  6. ½ cup of sugar
  7. ½ tbsp cardamom powder

INSTRUCTIONS

  1. Heat a pan and add ghee.
  2. After heating ghee add chopped cashew and chopped almonds and fry for 10 seconds.
  3. Add fine shevai and fry for 30 seconds. Don’t over fry shevai.
  4. Add milk and mix well.
  5. Cook shevai well in milk for about 20-25 minutes.
  6. Keep on stirring at intervals.
  7. Cook until Reduce the half quantity of milk.
  8. When shevai is about to get cooked, add sugar and mix well.
  9. Cook everything together for 5 minutes.
  10. Add cardamom powder and mix well.
  11. Turn of the gas and shevai take into a bowl and garnish with some dry fruits.
  12. Shevai kheer is ready to serve.
  13. You can serve this hot or cold too.
  14. It remains good in the freeze for about 3-4 days.
  15. It goes well as it is, or poori.

NOTES

  1. Don’t over fry the shevai. Make sure that shevai will not be turn’s in black.
  2. Milk takes too much time to reduce if you don’t have time, you can add khoya.
  3. Instead of cardamom powder, you can also use rose essence or kevada essence.
  4. Roast the shevai on low flame to avoid burning.
