Shrikhand is a traditional and trendy Indian dessert. It is made from yogurt/curd, powdered sugar, milk, and some dry fruits. Shrikhand is popular in Maharashtra and Gujarat as a dessert or a side dish savoured with joy along with puri or wheat roti. It is a side dish of thali meals and weddings, parties.

You require only three ingredients: fresh hung curd, powdered sugar and any flavoring of your choice for making dry fruits shrikhand. You can keep it or plain too.

You can add mango, Kesar, chocolate and many more for additional flavours.

INGREDIENTS
  1. ½ kg (500 gm) strained curd/ hung curd (chakka)
  2. 500 gm powdered sugar
  3. 1 cup milk (child)
  4. Cardamom powder
  5. Finely chopped almonds
  6. Finely chopped cashew nuts
  7. Finely chopped pistachios

INSTRUCTIONS

  1. Take the hung curd or chakka and strain the chakka through a strainer.
  2. It is straining the chakka because it removes big small lumps of curd and gives a smooth nice texture and consistency to shrikhand.
  3. Add powdered sugar and mix well.
  4. Add milk and stir well until all mixture becomes well combined.
  5. The sugar should also dissolve. Check the taste and add more extra sugar if needed.
  6. Add chopped dry fruits and cardamom powder and mix well.
  7. Add nutmeg powder and mix well.
  8. Beat it for about 5-6 minutes or until it becomes light and fluffy.
  9. Dry fruits shrikhand is ready to serve.
  10. You can collect it in the fridge for 7-8 days.

NOTES

  1. Shrikhand recipe tastes excellent when served chilled.
  2. Quantity of sugar depends on the sourness of strain curd.
  3. Use fresh hung curd that is not sour tasting.
  4. Straining hung curd is an essential step, so don’t skip it.
  5. After adding sugar whisk, the hung curd very well using a hand whisk until smooth.
  6. If you are doing in large quantities, you can also use a hand blender or a food processor.
